CHICKEN TETRAZZINI
2 1/2 cup cooked spaghetti
4 cups diced cooked chicken
1/2 cup diced bell pepper
1 small onion
2 cans of cream of mushroom soup
1 cup chicken broth
1 tsp. of salt and 1 tsp of pepper
1 lb. grated cheese

*Mix all ingredients together except one cup of cheese to add to the top later.  Pour mixed ingredients into casserole dish and chill for 30 or 40 minutes.  Bake at 25 minutes @350 degrees.  Add cup of cheese.  Return to oven to melt and brown.


SANTA FE SOUP

2 lb ground beef
1 onion, chopped
2 pkg. Ranch dressing mix
2 pkg taco seasoning
1 can black beans, undrained
1 can kidney beans, undrained
1 can pinto beans, undrained
1 can Rotel
1 can diced tomatoes
2 can white corn, undrained
2 c. water

*Brown beef and onion.  Combine all ingredients, simmer for several hours.

5 CUP SALAD

1 cup each of:
pineapple tidbits
mandarin oranges
coconut
small marshmellows
sour cream

We play with this a little bit because we like the oranges more than the coconut.  You really can't mess it up. :)

BROCCOLI CHEESE SOUP

A friend of mine gave me this soup and talked me through it.  She didn't have a recipe for it, per se.  I will put it into recipe form as best I can.

1 stick of butter
1/2 cup onion
2 - 10 oz. pkg of frozen chopped broccoli
2 cans cream of mushroom soup
2-3 soup cans of milk (depending on how thick you want it)
2 cups cheddar cheese
salt, to taste

Over low to medium heat, melt stick of butter then add the onions, browning until tender.  Then add your broccoli and season to taste with salt (or garlic salt) .  Add 2-3 tbs. of water and steam until broccoli is tender.  Add cans of soup and your milk, then add your cheese.  My friend suggests the 4 cheese mix for casseroles as it melts better and easier. However, I use what ever I have on hand, which is usually cheddar.  And honestly, I usually add more than what it calls for.  I like cheese.   Serve hot.

CAVATINI

Brown together 1 lb. ground beef and 1 medium onion.  Cook according to package 1 (8 oz.) package of pasta (Doesn't matter what.....I used penne today).  Then combine all ingredients, along with 1 pkg. pepperoni, 1 small jar of sliced mushrooms, 1 large spaghetti sauce and 1/3 jar of water.  Bake at 350 degrees for 20 minutes in oblong casserole dish.  Take out and add 2 cups of mozarella shredded cheese and cook until cheese melts.
